The brownies were delicious however my rolos mainly sunk to the bottom and formed a hard chewy texture which was okay . I followed the recipe to the T, timings and temperatures but the brownie layer rose to twice size in the pictures. I am going to try to make this recipe into a sausage dog shape(her other favourite).
Thanks, Hey! So the reason I say not to use that caramel for millionaires, is people to to just pour that tin onto the base and expect it to set, which it wont. Constantly stir the caramel, with a flat bottomed spatula to prevent any catching boil it on medium-high heat, and dont leave it alone for a second. Theyre gooey perfection. Brownies are one of those things that I think almost everyone loves! A skewer test isnt always the best because of chocolate chips, but if it comes out completely covered in raw mixture then they arent quite done!
Try a lower temp for longer if thats the case for you make sure to use the correct ingredients (such as dark chocolate, not subbing for milk chocolate) and bake until there is a ever so slight wobble. If your caramel is too soft once set, it wasnt boiled for long enough. Oooh I would say you would get a better result with a ganache!
I would just stick with the drizzle already on the recipe!

Hi Jane could I swap the rolos for chopped twix? kitkat For the brownies yes, and you can with the caramel but I prefer actual butter! Gooey, fudgey and perfect Rolo Brownies with chocolate chips, Rolo's, and a caramel swirl. I sat them at room temperature for about 20 minutes thinking that would help, but it didnt!

I made these today and although they are absolutely delicious, I found the layer of brownies to be a little too thick and would prefer a thinner layer so that they dont overpower the caramel.

LOVE LOVE LOVE! However, this time I must have done something wrong with the caramel. I just tend to use chocolate chips as its easier, but it works the exact same if its a chocolate bar chopped up. The mixture should wobble ever so slightly in the middle, but if it all wobbles it needs longer. How do I stop the choc chips and rolos sinking to the bottom? As I use the carnation caramel drizzle I literally just drizzle it over the brownies and bake but if you use a jar or tin of caramel you want to lightly drizzle and swirl the caramel in. However, I went the extra mile, and I bought a gas camping stove purposely to be able to make caramel in the future. But the only problem is my caramel is so hard, tastes lovely but cant cut into it and also very hard to bite into. All you need to do is boil for a couple minutes longer.

Oh my days, it honestly was ideal. Drizzle the caramel over the top of the brownies and very gently swirl in.
But this time was perfect. If your brownies are taking much longer than stated to bake, your oven may have been the wrong temperature, or you overmixed your batter.

I have just made my second batch after my husband brought me more rolos not that he was hinting or anything . Its also down to mixing carefully and correctly!
Chances are, you just did it a minute or two too long and thats it. Please see my disclosure for more details!*. These Rolo brownies have the same base as many of my other recipes such as my honeycomb Crunchie brownies! I understand this means it probably wont be as chocolatey!

Hiya! Yes you can add the same weight of more plain flour! I had it in for 2 hours and it was still swampy and runny didnt have that signature brownie cracked top at all, Ahh okay, so it may have been the caramel then, sorry!! My caramel never sets like that. It may be your brownie mix was thinner make sure to really carefully fold the mixture, and make sure to whisk the eggs and sugar enough at the beginning! Cheating and using a ready-made caramel will not work for a recipe like this I always get questions asking how to make ready-made caramel set better, and you just cant. They are even better once refrigerated. I used a caramel drizzle to add a little more yumminess to these Rolo brownies, but thats also optional.

I find that can cause more problems then people realise if its incorrect (but also the caramel if swirled in too much will cause it to need more baking time is all! Kept on putting them in and out of the oven and they just werent cooking and kept on being swampy. Twitter
Don't swirl it in too much otherwise it may disappear into the brownie.
I used only triple Chocolate Chips inside the brownies, and it made it easier for me as I didnt want to open another bag of chocolate at this point (I forgot I would have to for the topping but hey ho!).

Can I use this recipe but put bars of dairy milk caramel on top of half of the batter and then pour the rest over the bars or would you recommend a different recipe? I recommend using a sharp knife, fridge cold brownies are definetly easier so it may be worth giving that a go xx.
